The World Institute of Kimchi conducts comprehensive research and development on kimchi to enhance Korea’s status as the origin country of kimchi and to promote its globalization.

The Bank of Kimchi Resources and Information is a platform that provides integrated information on both the “Biological resources” discovered through kimchi-related R&D and the “informational resources” that can be collected, analyzed, and utilized from them. “Biological resources” refer to unique Resources identified in the kimchi industry and kimchi R&D fields, including kimchi starter, Kimchi Lactic Acid Bacteria, functional Lactic Acid Bacteria, and various kimchi-derived Resources. “Informational resources” include genomic and functional data obtained from the Biological resources, as well as information on kimchi raw materials and potential hazards that may threaten the hygiene and safety of kimchi.
National sovereignty over biological resources has gained increasing importance since the adoption of the Nagoya Protocol on Access to Genetic Resources and the Fair and Equitable Sharing of Benefits arising from their Utilization, under the UN Convention on Biological Diversity in 2010. Furthermore, securing distinctive kimchi research resources and information as foundational materials for the bio-industry is becoming increasingly significant. The World Institute of Kimchi seeks to strengthen Korea’s sovereignty as the origin country of kimchi by collecting, preserving, and distributing kimchi-derived biological resources and related informational resources. -
The Bank of Kimchi Resources and Information has established an efficient information system that encompasses the acquisition, preservation, and distribution of biological resources, as well as the open sharing of informational resources. We will proactively respond through systematic research, extensive collection, and preservation to secure indigenous kimchi-related resources and discover valuable new resources. In addition, we will strive to preserve the value of kimchi resources—the culmination of excellence in fermentation science from historical, cultural, scientific, and industrial perspectives—while continuing to secure new resources, thereby elevating Korea’s status as the origin country of kimchi.
