| As a kimchi lactic acid bacterium that can be used as a kimchi starter due to its high survival rate and high mannitol production in the environment of kimchi, when kimchi was manufactured using WiKim33, the rate of increase in acidity was slower(28 days extension compared to control group) than that of kimchi without the addition of starter, and it was transferred to company E with a technology that improved kimchi quality such as improvement of sensory characteristics(carbonated sense, clean taste, cool taste). | ||
