The World Institute of Kimchi, which was established as a government-funded research institute under the Ministry of Science and ICT in 2010, diligently works to scientifically identify the factors that make excellent kimchi, enhance the competitiveness in the Korean kimchi industry, and globalize the appreciation of kimchi.

Kimchi is a staple in Koreans’ diet and also represents Korea around the world. Kimchi is a healthy food with a unique taste and flavor that enables us to take in new nutrients that do not exist in the raw ingredients and many live lactobacilli.

While kimchi has been enjoyed for thousands of years of history, it is also currently recognized as a healthy and tasty dish throughout the world not just in Korea. Kimchi is rapidly emerging as a representative front-runner of K-FOOD, thus sparking interest in and spreading Korean culture. However, there are continued challenges around kimchi production that include issues related to the origin country of kimchi, hygiene, and food safety.

The World Institute of Kimchi, as a national level research institute, will contribute to popularizing the kimchi industry and globalizing kimchi by: developing key basic and source technology, designing special technology to address current issues related to kimchi in Korea and around the world, and disseminating the technology the kimchi industry needs currently. These goals will be achieved through our concentrated efforts in research and strengthened R&D in order to present solutions to the current challenges.

We will put forth our best efforts to demonstrate the excellence of kimchi scientifically, continue to publicize kimchi through seminars, and conduct investigations and analysis of the food cultures of other countries. This will help us to establish localized strategies for the success of kimchi in different food cultures and to also highlight the position of Korea as the origin country of kimchi. Thus positioning kimchi as a globally enjoyed dish.

We will do our best and hope that your continued interest and encouragement helps us to create various successful research outcomes and establish Korea as the origin country of kimchi.
